Ginger-Tomato Salmon With Coconut Jasmine Rice ( Toddler Friendly)

I am constantly looking for delicious new recipes for my family. I have a very picky toddler and its really hard to introduce new things to her. I stumbled upon this recipe while shopping at publix. They have their apron meal samples during the week.  I tried it and my daughter surprisingly liked it too. I got all the ingredients and made it myself the next day.  I have been loving Salmon lately and I usually just throw it in the oven with some salt and pepper along with some roasted veggies. This is a new exciting recipe that i would never thought of myself. This is the perfect weeknight dinner meal. You can literally throw it together within 15min. You can substitute the coconut rice for some quinoa or brown rice for a healthier option.  Hope you enjoy it. you can find the recipe on Publix's Website HERE

Ginger Tomato - Salmon

Ingredients:
2 cloves garlic, coarsely chopped
2 teaspoons ginger spice paste
1 cup low sodium chicken stock
1 cup coconut milk
1 1/2 lb salmon fillets, skin removed
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 (14.5-oz) can petite diced tomatoes, drained
1/4 cup green onions

Steps
  1. Chop garlic. Preheat large sauté pan on medium-high 2-3 minutes. Place garlic, ginger, stock, and coconut milk in pan; bring to a boil. Meanwhile, season salmon on both sides with salt and pepper (wash hands).
  2. Add tomatoes and salmon to sauce, then reduce heat to medium-low; cook 8-10 minutes, basting fish with sauce occasionally, or until salmon is 145°F (or opaque and separates easily). Place salmon and sauce on rice; sprinkle with green onions and serve.

                                                                Coconut Jasmin Rice

Ingredients
1 cup jasmine rice
1 1/4 cups chicken stock
3/4 cup coconut milk
1 teaspoon sesame oil
1/4 cup pre-sliced green onions
1/4 teaspoon kosher salt

Steps:
  1. Place in medium saucepan: rice, stock, coconut milk, and oil; bring to a boil.
  2. Cover and reduce heat to low. Simmer rice 18-20 minutes or until liquid is absorbed and rice is tender. Fluff rice with fork; stir in green onions and salt. Serve.

The coconut rice is so delicious but if you don't have time to go through this step you can always substitute some instant brown rice. My favorite is Uncle Ben's 90 second Whole grain rice bags.

I hope you guys enjoyed this post and definitely check out Publix's Apron recipes to find some other great meals

July Favorites

Hello Beauties! I wanted to share my favorite products for the month of july with you!

7 Miracle Leave in Conditioner $13.00 Sally Beauty Supply

This product is a "dupe" for It's a 10 miracle leave in. I have been absolutely loving it
this month! I discovered it at the end of May when they had it on sale for BOGO Free! at
Sally's Beauty. This leaves my hair manageable and shiny and ready for styling.
I didn't really see a difference between the two bottles but i was very satisfied and will be definitely repurchasing.( Also helped with keeping my hair frizz free in the humidity ++)

ORGANIX Moroccan Argan Oil Shampoo & Conditioner
$7 Drugstores

I alternate Shampoo & Conditioner every couple of months but i always find myself going back to the Organix brand. I really like that there products are sulfate free! keeping my damaged hair not looking dull. The Moroccan argan oil really moisturize my dry frizzy hair and using this with the leave in conditioner listed below have really made a difference in my hair! keeping it soft and silky without leaving it looking oily and flat!

MAC Prolong wear Concealer NC20
$18.00 Mac Stores
This concealer is amazing! a little really goes a long way. Its super easy to blend and it last all day ( when setting with powder) I got this in a shade lighter than my skin tone (NC30) to not only cover but also brighten my under eye area!

BareMinerals Powder "Well Rested"
$18.00

This is a yellow/ivory powder  that I use on top of my concealer for setting and also brightening, I have been using this product for years and its by far my favorite setting powder for concealer. You can also use this on its own for light coverage and for highlighting.

Revlon "Nude Attitude" Lipstick $6.00
Revlon "Peach Petal" Lipgloss

This combination has got to be the most flattering nude lip I have ever tried.
Its just the perfect shade between a peachy nude that does not leave your lips looking washed out!

The Balm "Frat Boy" Blush $21.00
This blush is a really pretty matte coral-pink tone. It is so pigmented! very easy to blend and last all day long. I love that there is no shimmer in this blush because lately I am really big on highlighting my cheekbones. I find that using a shimmery blush and adding a highlighter leaves me looking oily especially in this hot summer weather!. This blush is currently ON SALE on hautelook.com

These were my absolute favorites for this month! I hope you enjoyed and maybe end up trying one of these products! Look forward to seeing everyones favorites!

Kardashian kollection Sears

I personally don't go for the kardashian kollection at sears because i think some items are overpriced and i really hate their size charts. i dont think they are true to size whatsoever. But every time I'm at my local mall i pass by to see what collections they have out and to see if anything is worth purchasing or worth trying on . I can truly say I only look at sections that have the 50-75% off ( because honestly wouldn't pay full price).i came across this dress that i have seen KimK wear on several magazines that i really liked. I believed this particular design was in their Dorothy Perkins line. Well its a little different because its sleeveless which actually works better for me with this hot Miami weather. The original price was $79.99 and was on sale or $46.99! I really like the material its thick enough to not look cheap. I also like that its knee-length so its long enough to balance the key hole neck line. I'm sure if you check a sears location now it even may be cheaper! definitely a dress worth trying on.

Post Partum Story & Belly Bandit Review

I cant believe last time i wrote on this blog i was only a few weeks pregnant and here i am now, a mother to a beautiful almost 3 month old baby girl.
I can really say no one can prepare you for motherhood , you just simply adjust and its all in your instincts. its a pretty beautiful thing. A lot of people ask how long it took to drop the baby weight etc. I know that was one of my concerns. I gained a total of 20lbs during my pregnancy. I didn't go crazy and ate for two but i definitely indulged. before pregnancy I avoided starches like bread, pasta and rice (even wholewheat) but during my 9 months I was obsessed with panera bread. I also had a big craving for M&M mcflurrys from Mc donalds. I have been exclusively breast feeding since the day she was born and I dropped all the baby weight within the first 10 days. Now of course certain parts of my body  are now covered in stretch marks and my stomach is very far from being "tight" but the human body is truly amazing! little by little and day by day you start feeling like your old self again! (pre-partum)

This picture was taken 3 weeks after I had danielle. What I did right after the recovery room was put my belly bandit on.( a compression garment for post partum) I read tons of reviews on it (both positive and negative) but i still decided to give it a try. I do feel like this and the combination of breast feeding helped immensly, I liked that right after labor the garment gave me some sort of comfort,  without it i felt a strange empty feeling in my stomach! I purchased the Bamboo one because it was supposed to be most comfortable.

Now I am not going to lie it wasn't the most comfortable at times , especially when nursing.
I had to remove it several times a day since you nurse a newborn every 2-3 hours. It also did show through your clothes (not since you will be going out anywhere lol) but it didn't really matter to me because everyday I saw my stomach shrink more and more. The instructions stated to wear for the next 6 weeks or so. Since i had tons of family over and by the second week everything really felt right i stopped using it.

Bio-Oil is another product that i swear by! during my first trimester my best friend gave me the coco butter lotion set for stretch marks and it smelled awful! So for the first 2-4 months i really didn't put anything on. I start researching lotions and oils to prevent stretchmarks and i came across bio-oil.
the scent is far from pleasant but the oil formula really soothes your skin especially when your stomach starts getting itchy!! I Used it from 4-9 months DAILY in the evenings and I'm proud to say i have not 1 stretch mark on my stomach. However i do have them on my thighs and chest . I wish i would have listened to my mom when she told me to moisturize my thighs and bum :(

Me and My sister have started a new blog all things mommy, fashion , nutrition and fitness please check it out!
